Due to the different types of yeast, different fermentation conditions, different requirements for beer flavor, the fermentation method is also different. Generally, beer fermentation technology is divided into traditional fermentation technology and modern fermentation technology. The modern fermentation mainly adopts cylindrical conical fermenter, which is the fermentation method used by most craft breweries now.
Today, let's take a closer look at the main specification of the conical fermenter:
(1) Shape of the tank:
The bottom is designed to be cone -shaped, which is convenient to discharge yeast at any time during production.
Normally, the cone angle of conical fermenter is 60 degrees, this is applicable to most breweries, but there are also some customers who will determine the cone angle according to the actual space of their plant, there are also special requirements of customers, for example, many Chinese breweries would like to use a 72 degree cone angle fermenter.
So the cone angle of fermenter is not fixed, ranging from 60 degree to 75 degree, but not for all the breweries, it should be done on a case-by-case basis.
(2) Double wall tank with jacketed and insulation:
l The conical fermenter has dimple jackets on tank body and cone, which is convenient for us to control the temperature in the fermentation process, it can reduce the chance of bacterial contamination in the fermentation process, to ensure the stability of beer quality, to shorten the fermentation time etc
l The conical fermenter has a polyurethane insulation layer. The thickness of the insulation is designed according to the capacity of the fermenter, generally 50mm-120mm. So the fermenter can be also placed outdoors to save the plant space for large breweries.
(3) Pressure adjustable valve:
Conical fermenter is closed tank, which is convenient for CO2 washing and CO2 recycling, and fermentation can also be done under a certain pressure. So generally there’s a pressure adjustable valve for conical fermenter, or some customer who do not require the pressure adjustable valve will require a blow-off pipe on one side of the tank.

(4) Temperature control:
The fermenter can be controlled by temperature controller, which is convenient to operate and manage. For large breweries, it also can be controlled by microcomputer. For the craft breweries, there are two ways to control temperature of fermenter, one way is to install the temperature controller on the tank body, another way is to make a control box to control all the fermenters’ temperature.

(5) Fermenter is equipped with CIP cleaning pipe and 360degree rotating spray ball, which is convenient for cleaning.
(6) Manhole for checking:
For the fermenter capacity less than 500liter, the manhole is on the top of the head;
For the fermenter capacity more than 500liter, there are two kinds of manhole: side manhole or top manhole, customer can choose according to their needs.
For large capacity fermenter, mostly the manhole is side manhole.
(7) The effective capacity can be designed according to the production requirement, ranging from 50l to 40hl, and there’s also a 25% top space to prevent foam out.
